A poor diet and low vegetable intake is linked to poor health in the UK and preventable diseases such as heart disease, type 2 diabetes and cancer. It has also been associated with depression and weight gain.

This plan will focus on reducing food waste and allow you creative new ways to develop meals.

This is not a strict or rigid plan. It does not involve calorie counting and is not focused around a vegetarian or vegan diet - unless you want to of course. It simply aims, to help you to reconnect with portion sizes and seasonal veggies in a new way to optimise your overall health.

Backed by a variety of health professionals, dietitians and nutritionists such as renowned cardiologist Dr Aseem Malhotra, Nutritionist Dale Pinnock and the Association of Nutrition, as well as, Sports athlete Victoria Pendleton CBE, Food Foundation Veg Power and food companies such as Abel&Cole.

What is this challenge?

One quick recipe per day for five days, aiming for 5 a day.

You can incorporate the meals alongside meat and fish - I am not asking you to turn completely veggie. The plan will teach you a new way of incorporating more vegetables into your daily meals, which in the long term will increase your overall health. The plan includes shopping lists to help make your weekly preparation quick and easy.

Most recipes take between 15-30 minutes to prepare and cook.

 

Why?

The Great British Veg Out is a 30 day challenge seeking to embed genuine behavioural change in the consumption of fruit and vegetables to tackle preventable health diseases in the UK population.

One out of every six deaths in the UK are attributed to poor dietary habits alone (Blue Dot, BDA).

 

WE CAN CHANGE THIS!

It may sound scary, but 9 - 10 portions of vegetables and fruit (mainly veg!) are linked to a reduction in non-communicable diseases such as cancers, type 2 diabetes and heart disease. Increased veggie consumption has been linked to weight loss and even reduced symptoms of depression! Sometimes we forget that preventable health measures like a good balanced diet can be so important for our health.

Food waste

The 30 day challenge highlights the impact of food waste on the environment, shares tips and tricks to reduce waste, improve understanding of best before and use by dates, encouraging you to plan meals in advance with my carefully-created recipes, saving leftovers and providing useful tips to reuse these in other meals throughout the week.

Cost

It is a common misconception that healthy eating is expensive. I want to share the message that healthy eating can be done on a budget. My recipes include cost effective produce such as canned tomatoes and beans, frozen fruit and veggies. These products help to keep the cost of meals low, whilst ensuring you are not sacrificing on nutritional value and flavour. 

Meals are based around whole food, plant proteins including beans and legumes which are cheap to buy in comparison to meat and fish. They also store for longer which means that waste is reduced.Through encouraging the reduction of food waste by planning meals ahead, I incorporate leftover ingredients in our recipes throughout the week and provide tips and tricks to keep food fresh. This all helps to prevent food waste and the associated costs.

Accessibility

Ingredients included in my recipes are uncomplicated and can be purchased from regular supermarkets across the UK. We provide options in recipes and guidance to help you swap out ingredients depending on the availability to you.

The recipes are easy to follow and take between 15-30 minutes to create and cook. If you are cooking on a budget we would recommend to buy rice and grains in larger packs and cook portions as recommended on the packaging, as this is a more cost effective option than pre prepared and microwavable packs.
